FRESH Ideas: Blueberry Lemon Galette


  • 1 rolled out 9 to 12 inch pie crust
  • 2 cups berries
  • 2 tablespoons cornstarch
  • juice & zest from half a large lemon
  • 1 tablespoon sugar
  • ΒΌ teaspoon salt
  • 1 egg yolk
  • 2 teaspoons water
  • large crystal raw sugar, for dusting


Lay crust flat on parchment paper on a cookie sheet. In a bowl combine berries, cornstarch, lemon juice, zest, sugar and salt. Layer berries around crust starting 1 1/2 inches from the edge and fanning around into the center. Fold the edges up around the filling. Brush the top of the crust with 1 egg yolk mixed with 2 teaspoons of water. Sprinkle crust with raw sugar. Bake in a 375 degree oven for 30-40 minutes.
