FRESH Ideas: Crepe Frittata


4 ounces goat cheese, room temperature

2 eggs

1/2 cup half & half

1 bunch fresh spinach, chopped

1 tablespoon sun-dried tomatoes, rehydrated, finely chopped

1/4 teaspoon salt

1/2 teaspoon cracked black pepper

1 package of crepes (10 crepes)


Preheat oven to 375 degrees. In a large bowl combine goat cheese, eggs, half & half, spinach, tomatoes, salt and pepper. Stir to combine. Grease a quiche dish or a pizza pan with canola oil. Lay one crepe on the pan. Top with a few spoonfuls of the egg mixture. Spread over the crepe leaving a 1/2 inch edge. Top with another crepe and repeat the process until all crepes are used. The top crepe should be left plain. Place in the oven and cook for 10 to 15 minutes until eggs are set and the edges of the crepes are slightly brown. Remove from oven and allow to cool for 10 minutes. Slice and serve like a pizza or a pie.
