Southern Italian Chicken


2 large boneless, skinless chicken breasts
1/2 cup flour, for dredging
Salt and pepper, for seasoning
4 thick slices whole milk mozzarella
1 large tomato, sliced into 4 slices
4 shaved slices of Proscuitto di Parma
4 large basil leaves
1 jar of marinara sauce


Preheat oven to 350 degrees. Place each chicken breast in a large zip top bag. Using a meat mallet pound the chicken flat and then cut each breast into two pieces. Season with salt and pepper on both sides. Pour the flour onto a large plate and dredge the chicken through the flour. Immediately place in a skillet over high heat with two tablespoons of oil. Brown on both sides and then remove from the pan. Do not cook through completely. Pour two cups of marinara sauce into a 9x13 baking dish. Place the chicken on top of the marinara. Top each piece of chicken with a slice of prosciutto, then the cheese, tomato slice and basil leaf. Bake for 15 minutes until chicken is cooked through, marinara is heated and cheese is melted. Serves four.
