FRESH Ideas for On The Go Breakfast

Breakfast is the most important meal of the day, but often the meal where we make poor choices that affect the way we eat for the rest of the day. Granola bars are a popular choice and may appear healthy, but are usually loaded with sugar, high fructose corn syrup or preservatives. But they are also easy and inexpensive to make at home and one batch can provide six to eight bars. You can also control the ingredients with the type of dried fruit, nuts or other additives you prefer.

Homemade Granola Bars

2 cups oats
1 cup unsalted nuts
1/2 cup unsweetened dried fruit
1/2 cup honey
Pinch of salt

Preheat oven to 400 degrees. On a large rimmed baking sheet spread out the oats and nuts and roast in the oven for ten minutes. Allow to cool. Coat a pie pan with cooking spray. In a large saucepan spray the bottom of the pan with cooking spray. Add the honey and cook over medium heat, without stirring, until large bubbles form and the honey begins to darken around the edges. The bubbles will start small and increase to about 3/4 inch in about two to three minutes. Turn off the heat and immediately pour the oats, nuts, dried fruit and pinch of salt into the pan. Spray a spatula with cooking spray and stir the mixture until completely coated with honey. Quickly press the granola into the pie pan. Place in the refrigerator and allow to cool for one hour. Cut into wedges and wrap in plastic wrap. Can remain at room temperature for up to five days or can be frozen.
