Fit City Success: Hidden veggies

EAST TEXAS (KYTX) -- Some parents struggle to get their kids to eat their veggies. But, there is a tasty way to sneak them in.    

The secret ingredients are hidden in foods kids love to eat like chicken nuggets, quesadillas and even brownies. Tyler mom Karolyn Davis said she found some recipes that make her feel better about offering those kinds of foods to her 4-year-old son, Zach. 

Karolyn and Zach are teaming up in the kitchen to make Zach's favorite: chicken nuggets. What makes these nuggets special and nutritious is the spinach puree that helps make the batter along with flax seed meal and seasonings to add flavor.

"Actually the chicken nuggets are really really good," Karolyn said. "It's really the only chicken nuggets he will eat." 

The recipe comes from Jessica Seinfeld's cookbook, "Deceptively Delicious." That's where Karolyn turns for her "go-to" brownie recipe; also with veggies.

"In the brownies, you really can't tell there's spinach and carrots," Karolyn said. "But the purées and stuff hidden in the food is not really a replacement. We do also offer him vegetables."

Which Zach also loves.  

"I don't know if that is because we automatically always put veggies in his food or because of the fact that we always offered vegetables," Karolyn said.  

If you don't have time to puree the vegetables yourself you can substitute them with store bought organic baby food.
