(KYTX) - It takes a lot of preparation to become a chef, not to mention a sharp mind.
Placement matters for Shane West, from the knife to the food, he's blind.
West trained at the Hyatt regency in Dallas, a partnership between the hotel and the state's Department of Assistive and Rehabilitative Services helped West regain confidence.
He lost his sight five years ago while battling diabetes.
"He could be a prep cook level one. He could work in any hotel, he can work in a hospital, school environment or any type of kitchen," says Anthony Dicarlo, his training director.
"Hopefully I can show people, hey just because somebody got a disability, doesn't mean they-- they're not.. totally helpless," says West.
And with his guide dog, Neptune, by his side he graduated from the program yesterday.
West is now able to work as a level one prep cook, not bad for a guy who lost his eyesight.
