Wine Poached Pears with Wine Berry Gelatin
Ingredients
2 1/4 cups dry red wine
1 cup water
1/2 cup sugar
3 pears, peeled and quartered
1 cup mixed berries
1 packet unflavored gelatin (ex: Knox)
Ice cream or whip cream, for serving
Directions:
In a large saucepan, bring two cups wine, the water and sugar to a simmer over medium-high heat. Add the pear slices and berries. Keep liquid just below a simmer and cook until pears are fork tender for about 15 minutes. Remove the pears and set aside. Strain out the berries and set aside. In a small glass combine the remaining 1/4 cup of wine and the packet of gelatin. Let thicken for about a minute. Pour the leftover poaching wine into a glass mixing bowl. Stir in the thickened gelatin and refrigerate for six hours or overnight. Serve the gelatin with the poached pears and some vanilla ice cream or whipped cream. Top with some of the berries that had been poaching in the wine.
