Fresh Ideas for Honey

This week in the Tyler Paper FLAVOR section we are talking about all of the wonderful ways to enjoy honey. This all-natural sweetener is a wonderful addition to so many types of recipes.
On FRESH Ideas I was joined by Chef Simon Webster from Sabor a Pasion Country House & Bistro in Palestine. Although he calls Texas home, Chef Webster is from England where he owned a café and catering company for many years.
He would make these scones everyday for tea time. He emphasized that unlike American recipes for scones, the English do not put sugar in their scones. The sweetness comes from the jam or honey that is added when the scones are served.
To go with the scones I made an Orange Blossom Honey Butter. The orange blossom honey has a light flavor with hints of citrus. Any local or Texas honey would be enjoyable in this butter recipe. Just be sure to read the honey label to ensure it is 100% honey. You could also make adjustments to the fruit by using lemons or berries instead of oranges.
No matter how you make it, this is an enjoyable treat with a cup of tea or your favorite coffee.

English Scones with Orange Blossom Honey Butter
3 cups flour
4 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 stick butter, cut in small pieces
1 cup milk (aprox.)
1 stick of salted butter, softened
1 tablespoon orange blossom honey
1/2 orange, juiced
1/2 orange, zest
Sift dry ingredients, rub in 1/2 stick butter, and mix to a soft dough with the milk until moist but still a little crumbly. Knead on a lightly -floured surface; roll out, cut, place on a lightly greased or floured oven tray and bake in at 350 degrees for 15 to 20 minutes or until lightly golden on the top. To make the butter combine butter, honey, orange juice and zest and stir until all ingredients are incorporated.
